Rusk Manufacturing
A rusk manufacturing unit can be set up in a semi-urban or industrial food-processing area with good road access. The main machinery includes a dough kneader/mixer, rotary or deck oven, bread slicer, rusk dryer/toaster, fermentation chamber, and packaging machine. The mixer prepares the dough, the oven bakes the bread loaves, the slicer cuts them into even pieces, and the rusk dryer/toaster re-bakes them to achieve crispness. A small-scale machinery setup costs around ₹5–15 lakh. The process involves mixing flour, sugar, oil, yeast, and other ingredients; fermenting the dough; baking loaves; cooling; slicing; toasting/drying to golden crispness; cooling again; and finally packing. Raw materials include wheat flour, sugar, oil or butter, yeast, milk powder, salt, flavorings, and food-grade packaging. Around 800–1,200 sq ft of space is required for production, cooling, storage, and packing. Rusks are consumed widely as a tea-time snack and breakfast item, and can be sold to local bakeries, supermarkets, grocery stores, wholesalers, hotels and canteens. Today, with growing urbanization, changing eating habits, and rising demand for convenient food, the rusk market offers strong opportunities. Healthier varieties like whole wheat or semolina rusks are especially popular, with strong demand—making it a future-proof business.
